Cooked this for lunch with last night's leftover rice using minimal ingredients from my almost empty fridge...; P
Here's the simple recipe,
What you need
A big bowl of overnight cooked rice
4-5 prawns, cut into small chunks
2 tbsp minced garlic
2 tbsp light soy sauce
2 heap tbsp of your favourite sambal sauce
1 egg, beaten
pinch of salt
Method
- Add 2 tbsp of cooking oil into a frying pan
- Add minced garlic once the oil is hot, fry till light golden brown
- Add prawns and stir fry briefly and add soy sauce
- Once the prawns are cooked, add rice and stir fry it for about 10mins
- Pour in egg and let it soak the rice for a while before mixing it
- Fry till rice is almost dry and add in your sambal and salt
- Serve
