Sambal Fried Rice

It's a bad weather day today, been raining on and off since last night. And it's cold! Oh...how I luurve the cold weather!! It's about 63F now and that's about 17 degrees celsius at 12noon...And it will continue to drop further by evening ; )
Cooked this for lunch with last night's leftover rice using minimal ingredients from my almost empty fridge...; P
Here's the simple recipe,

What you need
A big bowl of overnight cooked rice
4-5 prawns, cut into small chunks
2 tbsp minced garlic
2 tbsp light soy sauce
2 heap tbsp of your favourite sambal sauce
1 egg, beaten
pinch of salt

Method
  1. Add 2 tbsp of cooking oil into a frying pan
  2. Add minced garlic once the oil is hot, fry till light golden brown
  3. Add prawns and stir fry briefly and add soy sauce
  4. Once the prawns are cooked, add rice and stir fry it for about 10mins
  5. Pour in egg and let it soak the rice for a while before mixing it
  6. Fry till rice is almost dry and add in your sambal and salt
  7. Serve
