Breadmaker Hot Dog Buns

I have no idea why I have never post this too, now that I am staying thousands of miles away from home I miss those hot dog buns from the HDB bakeries...Really there are so many things we take for granted in SG.
I make these every week, sometimes twice a week and they are always welcomed with Oooo and Ahhhh from my SG neighbours haha...We must be really homesick!!! My family will be leaving US soon and my house is almost empty now...I have to bake these before I sell my breadmaker away!!! I adapted the recipe from here

What You Need:
150g cake flour
150g bread flour
2g salt
5g active dry yeast
60g sugar
125ml milk
1 egg
50g butter
1 egg yolk + 2tbsp cold water for glazing

Filling:
9 hot dogs

Topping:
Shredded Parmesan

What To Do:
  1. Add all wet ingredients (except butter) into the breadmaker pan
  2. Add dry ingredients leaving yeast last
  3. Make a little well in the flour mix and add yeast into the well.
  4. Start the breadmaker to DOUGH function and press START
  5. After 5 mins, add butter (cubed) in
  6. Restart the cycle after about 30mins.
  7. Once the cycle is completed (about 130mins after restart)
  8. Preheat oven to 180C
  9. Take out the dough and divide them into 60g
  10. Wrap hot dogs with the dough pressing the edges firmly together
  11. Brush with egg wash, sprinkle cheese and bake for 20mins.

French Toast for Breakkie

Had craving for this since last night and I just have to make it this morning ; P
French toasts always brighten up my day >_<

What You Need:


1 egg
3 tbsp of milk
1 tbsp sugar
3 slices of bread (I used 100% wholewheat bread)

What To Do
  1. Mix egg, milk & sugar in a wide bowl or plate
  2. Heat up 1tbsp of oil in a flat pan *
  3. Dip bread in mixture(both sides)
  4. Fry for about 5 mins each side or till golden brown
  5. Serve hot with fresh cream, berries or honey. In my case, plain.
*NOTE: Make sure the pan is hot before you put the bread in or else your french toast will end up with soggy centre.

Roti John

This is what I made for Hub to bring to work, managed to get this done within 15mins ; ))
For those who are not familiar with this dish, it is a popular breakfast in Singapore. You can usually find this in a Indian store at the hawker centre. Roti means 'bread' and John well most people believe is the person who requested/ invented this dish when Singapore was under the British colony. That's why it is always serve with ketchup but us being Singaporean often replace that with sweet chilli ; ) You can know so much about one's culture from the food they eat isn't it?

Anyway here's the recipe:

What you need
Half a loaf of baguette bread
About 1 cup of minced pork or beef
Abt 1/2 cup chopped onion
2 eggs (I used 2 to get the authentic 'hawker taste'; hey they are businessman too and eggs are cheaper than meat!!)
3 tbsp light soy sauce
Big dash of pepper (we use white pepper)

What to do
1. Mix all the ingredients (except bread) together
2. Cut baguette into halves, lengthwise
3. Spread meat mixture onto the bread (on the white part)
4. Heat up 1tbsp oil in saucepan
5. Pan fry meat side down and cover to ensure the meat is cooked. Fry till brown.
6. Turn bread over and fry for abt 5 mins too
7. Slice and serve with ketchup or Maggi sweet chilli..

Chocolate & Raisin Panettone


I bought a Sunbeam Bread Machine from Amazon (the site which I am addicted to) two weeks back and I have baked 2 loaves so far. The first loaf that I have attempted was the infamous Hokkaido Milk Loaf which did help build my confidence to try something more adventurous : ))

I bought a bread book from Amazon together with the breadmaker, it's " Bread Machine Easy" by Sara Lewis. It's a good book with 70 nice bread recipes which you can easily bake with the breadmaker....good for busy mummy like me!

Baked this today while baby was asleep, managed to put all the ingredients into the machine before he wakes up (I had exactly half hour) And the whole house smell delicious with freshly baked chocolate bread 3 hours later ; P
