Little Helper's Challenge

Hi, I am Happy Belly's Little Helper. I have been asked to make something out of a lemon and a bottle of dried lavender flowers for Happy Belly's friend C's bachelorette lunch tomorow. Decided to make some Lavender Sable for the 7 of them....Got this recipe from Fresh from The Oven


I need 200g of unsalted butter, softened at room temperature.

1 tablespoon of those lovely dried lavender flowers....Oh they smell so therapeutic...zzzz

3 tablespoons of cornstarch....Nothing more, nothing less....Have to watch it....

3/4 cup of my favourite sugar..

1.5 cup plus 1.5 tablespoon of all purpose flour....Achoooo....

1 egg yolk....See I can get perfect yolk!!!

All that zest from 1 lemon...
In a stand mixer, beat butter on medium speed until smooth. Add sugar and beat until well blended. Add in egg yolk, a pinch of salt....Ooops almost forgot that.... dried lavender and lemon zest....

Switch to low speed and add in the flour and cornstarch slowly....mix it just a bit more...

It should look something like that....

Divide the dough into 2 and roll them up into about 1 inch log...Chill them for 2 hrs in the fridge...But Happy Belly got impatient and she kept saying Chuck it in the freezer....So to the freezer they go....

Once the doughs are hardened, sliced them into 1/4 inch thick and line them onto the baking tray....Remember to line those trays...Oh, heat up the oven before doing this....180c.

Bake them for about 12 to 14 mins....don't get them too brown! Oooo....The smell of lavender is so divine!!!!

This is what I had for tea today....

And I helped to pack them into small goodie bags so that Happy Belly's friends can enjoy them tomorrow.....Hope they are Hello Kitty fans too....; )

Glad you guys enjoyed it as much as my Little Helper enjoyed baking it ;p
I bgt the dried lavender from Bunalun(near Chip Bee Gardens), they have a branch at Taka basement 2 as well.
