Bought a cheesecake cookbook ('Junior's Cheesecake Cookbook') last Christmas and thus I decide to try out their method of baking cheesecakes.
First of all, the recipe uses 3 blocks of cream cheese which I thought was a lot for my 8" springfoam. And the unique way of baking cheesecake using a waterbath. I bought a big rectangular pan for this, you have to immerse the springfoam into 1 inch of warm water and let it bake in the oven. This is to retain the moisture in the cheesecake mix and also prevent cracks.
This is the Bailey's Oreo cheescake I made which I modified from the New York Cheesecake recipe from that cookbook. I added 1/3 cup of Bailey's Creme Caramel and 1/2 cup of chopped Oreo. The crust was also made with Oreo as Hub loves Oreo crust. As you can see from the photo, it is really crack-free...and the sides look great too!
