Made these muffins last weekend, I was trying to use up my Baileys so I decided to add it to my muffins. Couldn’t really taste it in the muffins maybe I should increase it the next time…Happy Belly Just Luuurve the smell of baked muffins....
What you need:
2 cups all-purpose flour
1 cup sugar
3 bananas, mashed
50g butter, melted
2 eggs
4 tbs milk
2 tbs Baileys
1 tsp baking powder
1/2 tsp salt
Directions
1 In a bowl mix, mix dry ingredients and set aside
2 In a separate bowl, mix melted butter and eggs.
3 Fold in flour mixture into the wet ingredient.
4 Fill greased muffin tins 3/4 full.
5 Bake in a preheated 170 degrees C oven for 20mins
